can I cut them up into strips of 3 smds and use them in a model without any problems?

Yes. Just make sure to only cut it where indicated.

Then individual strips inside the model can be connected in series using thin wire. I did exactly this for under cabinet lighting in my kitchen. I ran wires to bridge things like the stove and sink and make one continuous strip throughout the entire kitchen.

If you want to use leftover in another model, you'd need a separate power supply.

What's more, the resistors are built into this LED tape, so it makes lighting easier. I'm currently getting my feet wet in model lighting and it is pretty fun.
