So I heard that Quick Shine is a good replacement for Future for dipping canopies after sanding and polishing them. I bought some last night and it seems cloudy and not quite the same as Future, and when I tried it on a spare canopy and vacuformed canopy, it beaded up on the sanded surface and made a really uneven coat.
Is this a case of needing multiple coats or something, or did I just believe internet misinformation?

My first question is was the surface clean?
I have noticed that when using a mate spray on high humidity days the effect can be cloudy. Is moisture in your clear wax?
Try experimenting some more and see what happens.

In my experiment, Quick Shine seems to work pretty well with hand brushing or airbrushing to gloss before decal work. I'm still not sure what to clean my airbrush out with after spraying it. I'm not impressed with how it works when dipping canopies. If any excess beads up after dipping the canopy, it tends to dry a little cloudy in my test. And again, if I don't like the result, what dissolves the stuff so I can start over?

Whenever I used acrylic paints I cleaned by airbrush out with paint thinner. I dis-assembled the airbrush, cleaned it out with a pipe cleaner and then filled up the cup with thinner and sprayed till empty.
I have never dipped canopies in Future. I only spray it for a glossy finish. I use other hand polishes for the canopy.

You stated earlier that you sanded and polished then before dipping them in Quick Shine. I'm wondering if the polish you used first could be causing the problem.
I suggest you thoroughly clean the surface to remove all traces of the polish so you have just bare plastic. Then try dipping the canopy and see what happens.
I've had people notice that the clear wax, Future, etc., will flow down the canopy leaving a thinner covering at top and collect at the bottom.

I would stick with just the regular acrylic and see how that does before adding anything to it.
